Hands down, the veggie burgers are the best. I love meaty, earthy and healthy burger once in a while. If you’re newbie vegan or non-vegan or trying to consume less meat then start with vegan burgers. There are a lot of recipes out there and super easy to make but ridiculously tasty, trust me. This one is my favorite so far.
Ingredients
400g cooked black beans
1Tbsp chili powder
1 Tbsp chopped garlic
1 Tbsp chopped ginger
1/2 tsp curry powder
1/2 cup chopped parsley
1 cup roasted cashew
1 cup cooked mung beans
1/4 cup rice flour or quinoa flour
1/2 cup mushroom-finely chopped
1 large yellow onion finely chopped
1 large tomato finely chopped-deseeded
2 Tbsp olive oil
1 tsp sea salt
For serving :
hamburger buns
lettuce
sliced onion
sliced tomato
1Tbsp ketchup
pickled cucumber
sliced avocado -optional
cashew dressing
1/2 cup arugula -optional
Directions
- Heat 1 Tbsp olive oil in a non-stick pan over medium heat, add the garlic, ginger, onion, mushroom, tomato, curry powder and chili powder, saute until fragrant about 1 minute. Remove from the heat and transfer into a large mixing bowl.
- Place the cashews to the food processor and pulse until crumbly then transfer into the mixing bowl.
- Mash the beans lightly using a potato masher until a paste then transfer to the mixing bowl. Stir the chopped parsley and flour. Sprinkle the salt to taste. Mix everything together using a wooden spoon.
- Divide the mixture into five, use hands to mold them into burger patty shapes.
- Heat the remaining oil in the non-stick pan over high heat, place the patties in the hot pan and fry about 4 minutes on each side until golden brown.
- Serve on hamburger buns with lettuce, sliced red onion, pickled cucumber, good quality ketchup, cashew dressing, avocado, and arugula.
