Boom !it is weekend, and the summer is officially here, well not really, the sun comes and goes but HEY no complaint for SURE!. I made these brownies other day and all gone by now, there were so incredibly delicious, super healthy, no added sugar, super easy and tasty. Since then, I couldn’t wait to make this bad boy for you all. This is what I love about being vegan, I actually get to experience new flavor which I never had before. I love the fact that I actually can have vegans sweets, not feel guilty. I came up with this recipe a month ago when I was craving for sugar. I completely stopped eating refined sugar after what I have learned about what the sugar industry doing for our health. It is regrettable to think about why we still allow unhealthily stuff to sell. I still believe healthy foods should be cheaper and accessible to everyone, and unhealthy foods should be banned. Well, it a long way to go. All we can do is eat mindfully. It’s time for a treat.
Directions
- Place the pitted dates in a mixing bowl and mash them using a fork then add the almond butter, cocoa powder, almond flour, orange juice, vanilla extract, lemon zest, and the salt. Mix everything using a spatula.
- Fold in the raisins, pecans and 1/2 cup chocolate chunks.
- Line a square baking dish with a parchment paper.
- Transfer the brownie mixture to the baking dish and leave it to freeze about an hour.
- Add the remaining chocolate chunks and coconut oil to a microwave -safe bowl and microwave about 30 seconds, frequently stirring if necessary.
- Pour the melted chocolate over the mixture.,cut them in bite-size pieces,
- Garnished with your favorite berries.
- Serve with a cold or hot cup of tea.
