I couldn’t believe how easy it was to make a vegan bread, to be honest, I’m not a fan of baking stuff it seems very complicated and time-consuming however I can say no to a loaf of warm and nutty banana bread. I have to give a try, and here is the outcome, it came so beautifully, and the whole house was smelling like bananas. This one is great if you have a sweet tooth and craving for something sweet. Nothing wrong with that giving a nice treat to our taste buds once in a week, in a healthy way possible. Cooking is all about the flavors, so be creative and add your favorite nuts to the mixture, you’ll not regret. Perfect for afternoon tea or a picknicks or even as a breakfast. I absolutely in love with this baby, I hope you do the same.
Ingredients
3 large ripe bananas
2 Tbsp coconut oil
2 tsp ground flax seeds
90 g coconut sugar
250 g plain flour
3 tsp baking powder
1 tsp vanilla extract
1/2 cup hazelnuts -crushed
1/2 cup raisins
2 Tbsp orange juice
1 Tbsp crushed walnuts ¨
pinch of salt to taste
1 Tbsp cinnamon powder
1Tbsp peanut butter or almond butter
1 tsp orange zest
1/2 cup blueberries
1Tbsp dark chocolate chips
1Tbsp dark chocolate chips
Directions
- Pre Heat the oven 175 degrees C, Line a parchment paper on a loaf pan.
- Place the peel bananas in a medium size mixing bowl, mash them using a potato masher. Add the coconut oil, coconut sugar, orange juice, blueberries, and peanut or almond butter,, mix until well combined.
- Add the flour, salt, cinnamon powder, vanilla extract, flax seeds, orange zest, chocolate chips, and baking powder to the banana mixture then stir well to combine.
- Fold in the hazelnut and raisins.
- Transfer the mixture to the loaf tin, sprinkle the walnuts, and bake around 30 mins or until a golden crust. Leave to chill about 15 minutes in the tin.
- Serve with ice tea or a warm cup of tea.
