If you’re looking for an easy, healthy, no baking and dairy free dessert recipe then you’re most welcome to today recipe. Today recipe is super easy yet ridiculously tasty one. As you may already to know, I like to create my recipes with healthy ingredients also affordable for everyone. If you’re someone like me studying late nights and needed some sweet to fill you up even same time, want to charge your brain then this one also for you. Dates are fantastic energy-rich food available at the market so don’t miss them. Try to eat them every day and no need for the refine sugar craving if you do so. I do eat pecans and walnuts a lot since they are rich in antioxidants, so I include them to today recipe however if you’re allergic to any of them, add any other nuts rich in antioxidants.
Ingredients
180g soft dates pitted
1 cup pecans, chopped
1 cup walnuts, chopped
1/2 cup hazelnuts, chopped
2 cups vegan white chocolate
1/2 cup coconut flakes
2 Tbsp kale juice or spinach juice
1tsp vanilla extract
1/4 cup water
1cup almond flour
1Tbsp cocoa powder
3 Tbsp peanut butter or almond butter
1 cup raisins
Directions
- In a medium mixing bowl, add the dates and using a fork, mash them until a paste or use a food processor and process until a smooth paste then add the nuts, mix until everything combined.
- Combine almond flour, vanilla extract, cocoa powder, and water into the mixture, fold until everything well incorporated.
- Line a square baking dish with a parchment paper, add to it the date mixture and press it down and smooth out evenly using a rubber spatula.
- In a medium microwave-safe bowl, add the chocolate and the green juice and microwave until the chocolate smooth and melted about 25 seconds, constantly stir if necessary.
- Pour the melted chocolate over the dough, cut them into little bite size pieces before freezing them and freeze about 3 to 4 hours.
- Serve with a warm cup of tea or coffee.
