Avocados are incredibly healthy and pack in unsaturated fats. I’m a huge fan of avocados and kales. I try to eat them every day. As you may already know, kale is one of healthiest superfood on the planet, packed with antioxidants, vitamins, and minerals. If I’m planning to impress my family or friends, I try to be creative with healthy recipes, this is one of my healthy snacks/desserts recipe to impress my friends.
Ingredients
4 cups kale
1 large frozen banana chopped in regular chunks
2 medium size kiwi, peel & cut in half
1 ripe avocado
3 dates
2 cups unsweetened plant-based yogurt
1/2 tsp vanilla extract
1 Tbsp peanut butter
2 1/2 cups dark chocolate
berries & nuts of your choice
Directions
- Place the avocado, kale, banana, kiwi, dates-pits removed, vanilla extract, peanut butter and yogurt in a high-speed blender. Turn on the blender and blend until smooth and creamy.
- For melting the chocolate, break the chocolate into pieces, place them in a medium microwave-safe bowl and microwave until the chocolate smooth and melted about 20-25 seconds.
- Place muffin liners into a 12 cup muffin tray, pour the chocolate evenly into cups just to cover the bottom then fill the cups with the avocado mixture.
- Top with your favorite berries and nuts, freeze for 2 to 3 hours.
- When ready to serve, peel off the muffin liner.
