INGREDIENTS
4 cups kales
2 cups ripe mango, cut in cubes
1 avocado, cut in cubes
1/2 cup sunflower seeds
For the dressing:
1 tsp dry oregano
1 Tbsp vinegar (if you don’t like the taste of vinegar just skip it)
1/4 tsp black pepper
2 1/2 Tbsp extra virgin olive oil
2 Tbsp fresh lemon juice
1/2 tsp Himalayan salt
Directions
- Combine kale and lemon juice then add avocado, mango. Mix lightly then pour the dressing over the kale, sprinkle the sunflower seeds.
for the dressing :
- Whisk together vinegar, lemon juice, salt, then add oil. Pour over the kale salad.
