Ingredients
3 cups frozen okra
1 tsp curry powder
2 yellow onions -sliced
1 tsp mustard seeds
1 cup tomato puree
1 Tbsp sesame seeds
1 tsp dried oregano
1Tbsp olive oil
1 Tbsp chopped garlic
1 Tbsp chopped ginger
1 tsp chili flakes
Directions
- In a medium size pan, heat the olive oil over medium-high heat, add the frozen okra, garlic, ginger, and mustard seeds.allow to cook about 20 seconds then add the curry powder, chili flakes, onions, and tomato puree, cook about 1 minute, stirring frequently.
- Turn off the heat, Sprinkle the oregano with a pinch of salt.
- Serve with a bowl of brown rice.
